Holiday Pastoral Council
The grazing board is the perfect centerpiece for your seasonal gathering. They are fully customizable to your preferences, easy to assemble and full of color and festive cheer. We love that they easily encourage guests to gather and mingle.
It’s easy to modify your grazing board based on the season or what’s available locally. Here is a list of the ingredients we used to inspire your own creativity:
- Bread stick cut into slices
- Heirloom tomatoes
- Burrata
- Mixed olives
- Wild smoked salmon
- Yellow nectarines
- Shaved turkey breast
- Manchego wedges
- Rosemary and sea salt breadsticks
- Basil leaves
- Olive oil, sea salt, ground black pepper
Layers of chickpeas
Say goodbye to plain old hummus! This is a fun and festive way to serve your favorite sauce and gather friends and family around the table. They’re colorful, crunchy and full of fresh flavors – all you need are some delicious crackers or cornflakes to serve with them.
Time to cook: 15, serves:6, as a side
ingredients:
- 500 grams (17 ounces) chickpeas
- 10 (100 grams) cherry tomatoes, cut into quarters
- 1 (100 grams) cucumber, cut into small cubes
- ⅛ (25 g) red onion, finely chopped
- ¼ bunch of parsley, leaves and stems finely chopped
- ½ cup mixed olives, cut into slices
- Half a cup of pomegranate seeds
- 2 teaspoons lemon zest
- 1 tablespoon extra virgin olive oil
For service:
- Favorite crackers, we used pita chips

We distribute the chickpeas in a serving dish.
Place chopped tomatoes, cucumbers, red onions, parsley and olives on top. Finish with a sprinkling of pomegranate seeds, lemon peel, and extra virgin olive oil.
Serve with cornflakes, crackers or choice.
Caprese salad
Are you looking for a quick and simple entertaining recipe? This classic caprese salad will delight guests and transport them to the beaches of southern Italy. Plus, it’s ready on the table in less than 10 minutes. The secret is simplicity – get the best quality ingredients you can get your hands on and let the flavors shine! Ripe, juicy tomatoes, fresh mozzarella and aromatic basil harmonize with a drizzle of high-quality olive oil. Tip: Keep tomatoes stored in a container on the kitchen counter to help them ripen.
Time to cook: 10, Serves: 4-6 as a side
ingredients:
- 400 grams (14.1 oz) buffalo mozzarella cheese, sliced
- 600g (21 oz) tomatoes, sliced
- ½ bunch basil, leaves chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic sauce
- Sea salt and black pepper

Place the tomato slices and mozzarella slices in a serving dish in a circular shape.
Add the picked basil leaves and drizzle with extra virgin olive oil and balsamic glaze.
Season with sea salt and black pepper. Serve immediately.
